They are vegan, gluten-free, and dairy free (if you use dairy free dark chocolate chips). This recipe is simple to make and comes together in only minutes. All you need to do is combine 6 ingredients to create these amazing Healthy Peanut Butter Cups. Its the perfect combination of dark chocolate and creamy peanut butter perfectly sweetened with a touch of organic maple syrup.
But why stop there? Add a surprise crunch to the dark chocolate with Sprouted Brown Rice Crisps, Pumpkin Seeds, Hemp Hearts, and a sprinkle of Chia Seeds. Ingredients
- Creamy Peanut Butter
- Organic Coconut Flour
- Organic Maple Syrup
- Dark Chocolate Chips
- Organic Coconut Oil
- Sprouted Brown Rice Crisps (by One Degree Organic Foods)
- Optional Toppings: Pumpkin Seeds, Chia Seeds, and Hemp Hearts

Recipe
This recipe creates 24 Healthy Peanut Butter Cups with no baking required but you will need a way to melt the chocolate chips.

Add 1 cup of Creamy Peanut Butter, 3 Tablespoons of Organic Maple Syrup, and 3 Tablespoons of Organic Coconut Flour to a large bowl. Stir to combine.

Line a mini muffin tray with 24 paper liners. I recommend using “If You Care” Mini Muffin Liners because the peanut butter and chocolate will not stick to them. Divide the peanut butter mixture evenly into all 24. Press down to make the top flat. These don’t have to look perfect since they’ll be covered with melted chocolate!

Melt 1 cup Dark Chocolate Chips and 1 Tablespoon of Refined Organic Coconut Oil in 30 second intervals, stirring after each, until completely smooth.

Add a 1/2 cup of Sprouted Brown Rice Crisps (see pic above for my favorite brand) to the melted chocolate and stir.

Top each peanut butter with the a spoonful of melted crispy dark chocolate.

Chop 1 teaspoon of Organic Pumpkin Seeds. Next, sprinkle Pumpkin Seeds, Hemp Hearts, and Chia Seeds on top of the Crispy Chocolate Peanut Butter Cups. Place in the refrigerator for 30 minutes to allow the chocolate to set up.

Here’s what you will end up with – 24 Healthy Peanut Butter Cups. These last for weeks stored in an air tight container in the refrigerator but who are we kidding!

Healthy Peanut Butter Cups
Ingredients
- 1 cup Creamy Peanut Butter
- 3 Tbsp Organic Maple Syrup
- 3 Tbsp Organic Coconut Flour
- 1 cup Dark Chocolate Chips
- 1 Tbsp Organic Refined Coconut Oil
- 1/2 cup Organic Sprouted Brown Rice Crisps
- 1 tsp Chopped Organic Pumpkin Seeds, Chia Seeds, and Hemp Hearts
Instructions
- Combine Peanut Butter, Coconut Flour, and Maple Syrup in a large bowl. This should thicken to a consistency that can be scooped with a spoon.
- Line a mini muffin tray with 24 paper liners. I recommend using "If You Care" mini liners so the peanut butter and chocolate don't stick to the paper.
- Divide the peanut butter mixture evenly into the 24 paper liners and press to create a flat surface for the chocolate.
- Place Dark Chocolate Chips and Organic Coconut Oil in a medium size microwavable glass bowl and melt 30 seconds at a time, stirring after each interval, until completely melted and smooth.
- Add the Sprouted Brown Rice Crisps into the melted Dark Chocolate and stir.
- Top each peanut butter cup with a spoonful of crispy melted dark chocolate. Then sprinkle with chopped Pumpkin Seeds, Chia Seeds, and Hemp Hearts to finish.
- Store in the refrigerator for up to 2 weeks. To serve: set out 1 hour before and allow to soften. Or you can eat them right out of the fridge!
