Recipe
Homemade Crispy Chocolate Peanut Butter Cups come together quickly and require only a little time in the refrigerator to set up. This recipe creates 24 mini peanut butter cups making them perfect for sharing, giving as holiday gifts, or setting out at your next party. This is a great recipe to make ahead of time since they last for days, even weeks in the refrigerator. With that being said, here are few simple instructions for making them at home.
Add 1 cup of Creamy Peanut Butter, 3 Tablespoons of Organic Maple Syrup, and 3 Tablespoons of Organic Coconut Flour to a large bowl. Stir to combine. This should thicken up and be easy to scoop.
Line a Mini Muffin Pan with 24 paper liners. I recommend using “If You Care” Mini Muffin Liners because the peanut butter and chocolate will not stick to these liners. Divide the peanut butter mixture evenly into the 24 mini muffin liners. Press down to make the top flat. These don’t have to look perfect – they’re being covered with melted chocolate!
Next, melt 1 cup Dark Chocolate Chips along with 1 Tablespoon of Refined Organic Coconut Oil. Start with 30 seconds and then stir. Melt for additional 30 second intervals, stirring after each interval, until completely smooth.
Add a 1/2 cup of Sprouted Brown Rice Crisps to the melted chocolate and stir to combine. Above is a picture of the Brown Rice Crisps I used in this recipe. These also work well for making No Bake Protein Balls… recipe coming soon.
Top each peanut butter cup with the melted crispy dark chocolate. It should take about a spoonful to cover each one.
Chop 1 teaspoon of Organic Pumpkin Seeds. Next, sprinkle Pumpkin Seeds, Hemp Hearts, and Chia Seeds on top of the Crispy Chocolate Peanut Butter Cups. Place the mini muffin tray in the refrigerator for at least 30 minutes to allow the chocolate to set up.
Here is what you should end up with – 24 Homemade Crispy Chocolate Peanut Butter Cups! Ready to grab for a quick protein snack, share as a holiday gift, or serve at your next gathering or party. When stored in the refrigerator they will last for weeks.
