Course Breakfast, Dessert
Crust
- 3/4 cup Organic Oats
- 1/4 cup Sliced Almonds
- 1 1/2 Tbs Organic Avocado or Melted Coconut Oil
- 1 Tbs Local Honey
- 1/4 tsp Organic Cinnamon
Filling
- 1 cup Organic Plain Greek Yogurt
- 1 cup Organic Cottage Cheese
- 2-4 Tbs Organic Maple Syrup
- 2 tsp Vanilla Bean Paste or Vanilla Extract
Toppings
- Organic Fresh Berries - Blueberries, Raspberries, Strawberries, or Blackberries
Crust
Add Organic Oats, Sliced Almonds, Avocado Oil or Melted Coconut Oil, Honey, and Cinnamon to a food processor.
Pulse until the mixture comes together and the almonds are tiny pieces.
If you are using glass jelly jars, place 2 tablespoons of the crust to each jar, and press down to form crust.
Rinse and dry the food processor container before making the filling.
Filling
Add Organic Plain Greek Yogurt, Organic Cottage Cheese, Organic Maple Syrup, and Vanilla Bean Paste to the food processor and blend until really smooth!
Using a spoon, add the filling. It should take about 4 tablespoons (approximately 1/4 cup) per jar. Tap the jar to settle the filling and create a flat top.
Topping
Top each jar with a few fresh organic berries of your choice. Blueberries, Strawberries, Blackberries, or Raspberries all work well.
Cashew Yogurt can be substituted for Greek Yogurt to reduce dairy.
If you don't have 4 oz jars, use a large flat bottom bowl instead and scoop individual portions as needed.
A Note About Sweetness: Add as little Maple Syrup as possible. Since Plain Greek Yogurt can vary in tartness, start with 2 Tbs Maple Syrup and only increase to 4 if needed.
