Sweet Heat Mango Salsa

This mango salsa is the perfect balance of sweet and heat. The sweetness of the mango and agave compliment the spicy cayenne pepper, garlic, and red onion creating an amazing unique flavor. Serve it with organic tortilla chips for a simple appetizer or afternoon snack. It also pairs great with black bean burgers and brown rice.

Ingredients
  

  • 1 Organic Mango - ripen, peeled & chopped
  • 1/2 Organic Red Pepper - diced
  • 1/2 Small Organic Red Onion - diced
  • 1/2 cup Organic Fresh Cilantro - diced
  • 1 clove Organic Garlic - crushed
  • 1 tsp Agave Nectar
  • 1/8 tsp Organic Cayenne Pepper
  • 1/8 tsp Sea Salt

Instructions
 

  • Allow the Mango to ripen on the counter at room temperature for at least 1-2 days. It will be both sweeter and softer. Once ripe, peel and chop one Mango and place in a medium size mixing bowl.
  • Dice the Red Pepper, Red Onion, and Cilantro. Add to the chopped Mango.
  • Add 1 clove of fresh crushed Garlic (with a garlic press or finely dice).
  • Pour the Agave Nectar over the top of the mangoes and veggies.
  • Add Cayenne Pepper - adjust amount to your heat preference. Add more if you like spicy food. Or just a dash if you don't.
  • Sprinkle Sea Salt on top and mix together.
  • Salsa is ready to eat when mixed. However, if you refrigerate it for an hour or 2 before serving its even better!

Notes

For meal prepping and convenience this recipe can be made a day ahead and stored in the refrigerator.  Left over salsa lasts 2-3 days in the refrigerator.  Always remember the best part of creating a recipe at home is you can adjust the ingredients!  Don't like spicy foods?? Simply reduce the cayenne pepper or add fresh lime juice.
